In 2006, while thinking about Alzheimer's disease, it occurred to Dr. Adelstein, founder of these Bean Sprout Chronicles, that perhaps there was a correlation between the low rate of Alzheimer’s disease in Asian countries and their diet, high in fresh fruits and vegetables, especially mung bean sprouts, known to be high in isoflavinoids.
Isoflavinoids are a type of polyphenol - compounds found in many fruits, vegetables, teas, herbs, spices and cocoa. These compounds are widely recommended for their anti-inflammatory, anti-carcinogenic, antioxidant, immune and mental-clarity boosting properties.
Dr. Adelstein thought maybe there was something special about mung beans. They are still living and growing when eaten raw, so they have a higher concentration of nutrients. Isoflavanoids are known to act on our cell's microtubules - and might have an affect on the accumulation of these in neurons
of patients with Alzheimer's disease. The science is still out on this theory - but along the way he discovered that drinking bean sprout juice had many positive effects on his health, and recommended it to just about anyone who would listen.
